Hervé & Diane Joyaux Fabre

Hervé and his wife Diane are the driving forces behind Latis. With an award-winning winemaking career spanning 30 years in Argentina, Hervé and Diane recently became the owners of Vignobles St Didier Parnac in the beautiful area of Cahors. Originally from Bordeaux, Hervé’s has been a major driving force behind the rise and success of Argentine Malbec with internationally acclaimed wines such as Viñalba. He has returned to his homeland for a new venture which will bring to life the wines that inspired him on his winemaking journey. An encounter and various tastings convinced them to rediscover the vineyards of Cahors, the original home of Malbec. They found themselves very impressed by the diversity of its terroirs, and how Malbec had developed and evolved. Both Hervé and Diane were completely mesmerised by the beautiful landscapes, the delicious food and the amazing kindness of the locals and vineyard owners. Our wines are produced in Occitanie (or Occitania) which is one of the most diverse wine regions in the South West of France.Our range covers the appellations of Cahors, Pays d’Oc and CÔtes de Duras, and is produced from according to Hervé Joyaux Fabre’s exacting standards.

Latis – vin de lumière

LATIS is the Celtic word for daylight, which is a reference to both the region’s strong Celtic heritage and the very special daylight in Cahors. This light is soft and golden and gives a sensation of peace, well-being and harmony.

Our Vineyards

Our wines are produced in Occitanie (or Occitania) which is one of the most diverse wine regions in the South West of France. Its unique location between two mountains ranges to the north and south, the Atlantic ocean to the west and the Mediterranean to the east, means it is blessed with superb weather and an eclectic variety of terroirs.
